The DNS can take anywhere from 24-72+ hours to propagate. Varies widely.
The email will have a break in service, but there is a semi workable solution. Before you change the DNS, get the IP address of the server you are on now, and in your current email account settings, try replacing the mail.yourdomain.com with that IP address and see if you can check it. If you are using webmail to access your email, then you should be able to use the IP address to access your site. This may not work with some other hosting companies.
If you can check your email with the IP address only, then you can setup two email accounts. One for the IP address of your old host, and one for the IP of the new host. That way you will catch all email that gets sent to your email addy.
