You must have deleted the Fantastico files in the root of your blog's install or the .fantasticodata folder in your site's root. Either way, you've basically only lost the ability to do Fantastico installs, which really it's better to do manual installs with blogs, in my opinion due to all the hacks and mods people make to the software.
If you have a backup, though you can restore the lost files, if not...I don't think you've got anything else you can do. (But I don't use Fantastico, so maybe someone else knows of something I don't.)
