I'm not sure about 3 monitors but two monitors I have done. I would assume 3 monitors would require 2 videos cars maybe setup in a SLI array? /shrug

Setting up dual monitors is easy. Pretty much all you need is a video card that has two outputs.
Here is a cool video showing you step by step. There are other helpful websites around the internet too that show u this.

What do you got for video card slot options? Do you got any pci-e slots or agp slots?
Example: My pc has 3 PCI-E Slots so therefore I can install 3 video cards.
