It's that "springform pan" that's a killer for me.

Add a little lemon juice to help cut the taste of the fat if you want (and no, I'm not suggesting lemon flavored cheesecake... you don't add that much).

Or if you use my beer-keg idea, I suppose it would be beer-flavored cheesecake... but for the love of all that is holy, please at least use something with a bit more character than Budweiser.

Really, we are all wrong.
You are supposed to get a pot of boiling water, and put a bowl filled with chocolate over it- to slowly melt the chocolate. I saw it on the Food Network.. and years ago first saw it on a Julia Child cooking show from the 60s. :ph34r:

You can do it in the microwave, but it's not as easy as a simple pot with some water and a stainless steel bowl above it (AKA double boiler). That way you can stir the mixture which is key to smoothness.

If the chocolate seizes, then you got a small amount of liquid in the chocolate. Just add more liquid and it should come back.
