Funny thing, I just went to the new Carlos Miguels in colorado Springs this week. Had almost exactly that.

See how beautiful those are? So bright and colorful. I would have to say that so far in my life, my favorite food is Mexican food. It's funny because a few years ago, I never would eat beans. Period. Beans were this forbidden thing to me. I associated beans with gas and with older people who needed to eat things that were mushy. But slowly over the course of a few months, I was eating Mexican food a lot and I began to get used to the idea of rice and beans. Never beans alone, but with rice I accept them. So anywho. Sure I like spaghetti. And sometimes I feel healthy and eat a salad. (I had a seared raw tuna and spinach salad last week with wasabi vinaigrette.. wow was that good.) And I like sushi too speaking of tuna. But there's really no other food like Mexican food to me. I used to think my favorite kind of food was Italian. How wrong was I. Because in the past year I am just not into Italian food anymore. I find it to be overly rich and always too thick with the cheese.. I don't like goopy and greasy cheese! I need cheese moderation. And all that garlic and butter. It's ok sometimes. But all the time? Give me fresh salsa and guacamole.. the cool dollop of sour cream to soften the bite of the spices... warm rice and beans with a little cheese on top, delicious red and green sauces.. and a few soft tacos or burritos. Or a quesadilla with chicken inside. YUM. And yeah, I am even more hungry now. Anywho that was a food moment brought to you by me. What is YOUR favorite food ever?

mmmm, mexican food is the greatest. my second fav is surely italian, but nothing can beat mexican food. if only for the spicy awesomeness of the salsas
edit: carlos miguels, carlos miguels, carlos miguels!!!! I am upset that they shut down the website they had going. It actually look nice, and displayed their menu and food. But here is the little bit online that has the most info: http://www.toski.com/carlosmiguels/ I need to talk to them about their site.

Dang, that does look pretty good. I'm going to El P again next week with some friends -- next time we're gonna take pics of all the food, and post them for all to see.
