Just a quick question.
Let's say I know I don't need the space upgrades (I haven't used 2 GB yet of the plan...)
But 5 years from now, or 2 months...
I find that I'd like the newer plans.
Can I request the new space quotas then, or will I look crazy...?
I'd like to request now, but I don't see me using up the space any time soon.

as long as you're a customer, you'll be able to request the upgrades... now, or a year from now. Upgrading "just because" simply causes more work for the Surpass help desk team... so waiting until you think you might need it is a very valid option!

Yes that is possible. I recommend you do it near your renewal rate to avoid double billing.

Currently I'm on Aeon Shared hosting and paid a year hosting. There's still about 6 months left. What if say I want to take advantage of the new plans and upgrade to a Bronze reseller plan? Say if I am paying for a year for the new reseller plan, can I use the remaining 6 months payment from the Aeon plan to 'pro-rate' the new plan and pay the remaining amount?

I hope I'm making sense here haha. It's just something I'm considering because then I can allow my friends to host with me and they will have their own cpanel.

That's pretty much how it works. You'll get a refund of what you've not used on your current plan, you'll be charged in full (plus a partial pro-rata for the remaining december days) for your new plan. You have to make sure you open a ticket with sales for this so that they migrate all your accounts and stuff, not just turn the old account off.
