Switching to Surpass soon, but one question

What is the best way to update the DNS Servers to have my domain point to the new IP?

By going to your registrar and change the IP addresses for the DNS servers into the one that Surpass gives you

I guess I would have to take it up with the previous hoster, as it was registered through them.
